Crackers with Whipped Feta and Roasted Cherry Tomatoes

The best part of these canapés is that, while everything is prepared in advance, most of the components are stored at room temperature. This means that you have one less thing to worry about storing in the fridge.

Given that one of the most frustrating things when hosting a party is to find space in the refrigerator for everything, this makes for an easy and fun solution. Using disposable piping bags is a game-changer and it opens endless possibilities for amazing parties. Plus, you will have your friends fighting over who is going to help you, as, for some reason, the view of a filled piping bag wakes up their inner Master Chef.

The Crackers with Whipped Feta and Roasted Cherry Tomatoes,  perfectly bite-sized, are a perfect example of this method. They are tasty, umami packed and so good-looking. Choose to make them for your next party, as nothing beats the charm of a seriously good homemade cracker topped with savoury deliciousness.

Crackers with Whipped Feta and Roasted Cherry Tomatoes

Prepare everything in advance and have a good time happily engaging with your guests.


You will need the following special equipment:

  1. piping bag click here
    I use disposable piping bags for my parties; medium size around 30 cm / 12 inches
  2. piping tip click here
    I use a round piping tip with 1.8 cm / 0.7 inches diameter, but you can use anything you have handy as long as it is wide enough to easily pipe the crumbled feta
  3. food clips to secure the piping bag

This recipe makes for 30-40 pieces, perfect for a party of 20 people.

You will need:

  • 40 pieces Charcoal Crackers, recipe here

or other crackers of choice, best size is around 4 cm x 4 cm / 1.6 in x 1.6 in)

  • 40 pieces Roasted Cherry Tomatoes, recipe here
  • 375 gr /  13,2 ounces Whipped Feta (recipe follows)
  • 1/4 cup chopped chives, to sprinkle

Step 1 – Prepare ahead of time
  1. Prepare the Charcoal Crackers up to a week before and keep them in a jar or other airtight container
  2. Prepare the Roasted Cherry Tomatoes up to a week before and store them in the refrigerator, in an airtight container
  3. Prepare the Whipped Feta (recipe follows) up to 2 days before

Step 2 –  Assemble

You will have to serve them as soon as you make them.

Prepare your workplace, find the platter you will use and have everything ready and close by you. The Crackers, the Roasted Cherry Tomatoes, the piping bag filled with the Whipped Feta and the chopped chives.

Take a cracker at a time and pipe a small mountain of whipped feta onto it. Top it with a Roasted Cherry Tomato. Place it on the platter and continue. When you have them arranged and ready, sprinkle with the chives. You do not have to do them all together, make the first batch and refill later. They are ok to be left at room temperature for 1 1/2 hour. On warmer days, it may be preferable not to leave them for more than an hour.


Whipped Feta recipe

Ingredients:

  • 250 gr / 8.8 ounces strained feta cheese
  • 95 gr / 95 ml heavy cream

Step 1 – Prepare the Whipped Feta

Crumble the feta cheese directly into a small food processor (the quantity is too small for a regular food processor) or a blender. Pulse for a few seconds to soften. Start adding the heavy cream in 3-4 additions, stopping before each addition to scrape the sides and bottom of the food processor with a silicone spatula. You want to obtain the consistency of thick strained yogurt, which is spoonable but does not fall from the spoon.

Depending on the feta you use, you may not need to add all the heavy cream. The feta I used has 43% fat, which means it is 56% water. If your feta contains less than 43% fat (which in turn means it contains more water),  it is only natural that you will need less heavy cream, as it will become more liquid than you want it to.

Step 2 – Fill the piping bag

Prepare the piping bag; cut the edge with scissors or a sharp knife. Fit the piping tip. For clean storing, you can secure the space above the piping tip with a clip. This will keep the content of the piping bag safe until you are ready to use it. See photo

Fill the piping bag with the whipped feta. If you are new to this, see these step-by-step instructions by Stella Parks (the twisting thing does not work for me because my piping bags are too thick). Secure the open side with a clip to close. Store in the refrigerator until ready to use and up to 2-3 days.

Tip:

when you are ready to use it, remove the clip that is above the piping tip. It is best is to do it over the sink, just in case there any drippings of water from the mixture. Use as described above.
